New coffee shop brewing in Lincoln

LINCOLN – Work is underway on a new specialty coffee shop at the Limerock Retail Center.
The Town Council granted owner Alicia DeCastro a victualling license last week, allowing her to open Fundati Coffee at 1525 Old Louisquisset Pike. DeCastro said she’s building out space for the specialty coffee shop, cafe and roastery.
“Fundati,” she said, is a term meaning groundedness and stability, concepts the coffee house is founded on. The shop will use a pour-over brewing process with fresh-ground coffee beans.
The idea is that people take a step back when they visit Fundati, “creating an experience” around their coffee or tea break. DeCastro, who has a background in yoga and holistic health, said she’s trying to promote those concepts in her shop.
“We want to create a community space for people in town to come together,” she said.
In addition to coffee and tea, Fundati will serve fresh pastries.
DeCastro said they’re working on building an outdoor patio space for guests.
Town Councilor T.J. Russo said he’s excited for the idea of a new coffee spot in his district, but recused himself from the victualling license vote because he legally represents DeCastro’s landlord.
Councilor Ken Pichette said small coffee shops tend to become the “hub of the neighborhood. People are looking for places like this. I think it will be great for the neighborhood.”
Fundati was given approval to open from 6:30 a.m. to 2:30 p.m. Monday through Wednesday, 6:30 a.m. to 6:30 p.m. Thursday and Friday, and 8 a.m. to 2 p.m. on weekends.
DeCastro said construction is moving well on the coffee shop, and that she plans to open soon when work is complete.
